'Long passing + quick tempo + ultra defensive' vs 'Long passing + quick tempo + Attacking'

I'm curious to know what is the difference between -

Long passing + quick tempo + No time wasting + Ultra defensive mentality

vs

Long passing + quick tempo + No time wasting + Attacking mentality

How will my team play in above two scenarios?

Assuming this is set for all 10 outfield players:

With ultra defensive - players won't commit to get forward. So presumably your long passes will not reach anybody.

With attacking - perhaps too many will commit forward, and you'll get hit on the break.

Why not watch one full game of each tactic employed and report your findings?

I think the same as SWaRFeGa: Long ball is generally a percentages-based style of playing football, so a balance between the two mentalities might work...otherwise you'll constantly give the ball away cheaply with ultra defensive, and when you do lose the ball when attacking, you'll be exposed (probably out-wide as your fullbacks will bomb-on).
