PhroX
Something I thought I'd spotted before, so I decided to check carefully. Have a look at these screenshots: With just shy of half-an-hour played, my midfielder Jeong Jae-hoon has picked up a knock, and, not willing to risk him getting seriously hurt, I substitute him. When he comes off, he has a rating of 6.9, as, in the time he was on the pitch, he played pretty well. I go on to win the game, and at the end of the match, we take a look at my players ratings, and JJH has....6.3...wft? Whats going on here. How can he play worse when he's not even on the pitch? I'm pretty sure Chi's rating decreased as well, but I don't have a SS of when I subbed him.

jsm
I've seen the exact opposite happen with me. Say for example a player has a rating of 5.5 and is substituted at half time, their rating will sometimes rise to 6.4 when the second half begins despite them no longer being involved in the match.
