You could try setting the striker as the target man and focus the passing down the right flank.

No, you can only have one target man (and playmaker) on the pitch at one time. If you have a few in your menu list the highest-placed one who is on the pitch is your target man.

I often switch tactics during a game; for example, I'll have my quick striker a target man with 'run onto ball' instructed, but if he isn't getting any joy, change my target man (by changing the order in the target man menu) to the big strong guy and instruct 'hold up ball' or 'to head' depending on where the oppo defences are weaker. So you can change your one target man during the game, but only have one at a time.
