Hi! This is pretty common in-game. As long as you have a free spot available in your coaching staff, you'll be able to sign a second assistant manager. It's actually very helpful when you don't want to lose your current Assistant Manager but find a coach that's only willing to take up the assistant manager job. I don't know if the coach being an Assistant Manager rather than a Coach affects it's effectiveness as a Coach but it's useful nonetheless.

I'm currently playing a normal career mode and I've noticed in two different opportunities that I didn't get any notification that my player had effectively agreed a move away from the club, only noticing because of a social feed news that confirmed the situation. It happened when a player agreed a pre-contract move to another club and when a player agreed terms after getting his release clause met.
