If you do not want the skin to replace any of the match graphics delete the pitch folder from within the folder of the skin you are using (i.e. SKINNAME/graphics/pitch - delete the pitch folder).

The graphics that change the kits on the tactics screen can be in any location inside the graphics folder of the skin (\graphics\pictures\kits\outfield\back by default, but look for a outfield or back folder and delete it).

Once you have deleted the folders you'll need to turn the skin cache off and reload your skin, to update the changes.

There's not much you can do about the disappearing lines if you are playing in the normal resolution - if it happens often then it's just lazy skinning from the skin maker (either the fonts to big, or the box is to small among other things).
