Questions - staff contracts and pitch dimension

I've started playing recently and there's just two things that are bugging me.

 

Staff contracts - it appears these never end. Any time I've wanted to replace my staff with better people I've had to pay for mutual termination. Other than waiting until they get poached, is there no other way I can get rid of my staff without the cost of paying out their contract?

 

Pitch dimensions - It seems there is no way to change the dimensions like in the full version. Are the pitch dimensions purely cosmetic in Touch, or am I actually gonna have to take the pitch into consideration before accepting job offers?
