No problem. We got to do what we can to fix the league.
Also, I just simulated to the winter transfer window (jan 2022) and still no deadline day.
So yes, it seems to be something with the Danish league (and apparently Swedish as well).

So I have this issue as well in the Danish league. However, I manage Vejle and not Copenhagen, but I guess that does not matter.
I have uploaded a save game for you to look at. It's starts a couple of days before deadline day.
Save game filename in cloud - 'Danish League No Deadline Day'.
