Hi. Currently, the histories of both the Leinster and Munster Senior Cups show competitions taking place in a single year, every year. I don't think that's accurate. Both competitions are played across years and that's also reflected in the in-game rules, but not in the past winners log.
More specifically, looking at the database the Munster Senior Cup has the start and end years set correctly, but the "Took Place in a Single Year" column active while the Leinster Senior Cup is set to have started and finished in the same year throughout its history as well as the "Took Place in a Single Year" column active. Although the 2010 LSC did start and finish in a single year.
There also seems to be "Did Not Take Place" years missing (LSC: 2000/01 through 2009/10, 2020/21, 2021/22), but maybe that's a database style thing. 2019/20 should be set as "Did Not Finish" if I understand that option correctly.
