Yes, you could in older games. I don't know if that feature was removed. I also think it would be interesting if your new signings were a part of your "new signing press conferences" as is often the case.

In media interviews, in job offers (especially since signing former stars has become the thing to do these days), in the way fans react to your hiring (e.g.: if you say you played for 10 years as a CM at Atletico Madrid and then get hired by Atleti, your fans should be more excited and prepared to support you; whereas if you played for Real and got a job with Atleti, it would take a lot more for them to support you).

This is handled through the "youth recruitment" of every club and goes on in the background. I wouldn't be opposed to having the option to micromanage this, so that you can create a La Masia of your own. I guess youth recruitment hasn't had a major overhaul in a while, so it could be on the cards.

To piggy back on this, it would be great if we could create our playing history when creating a new manager. Sure, he was a "International (Global)" player, but who did he play for? What position?

Maybe you're managing the wrong club. For example, it would make no sense for Mourinho to take over at a club like Ajax, because they have differing set philosophies. If you are trying to promote youth, don't take a job at a "galacticos" style club.
