How many players do you tend to have on A, Su & De

I think so, unless you have a sweeper keeper on attack and attacking wingbacks, maybe.

My balance varies enormously depending on the nature of the players in my squad.  Some times I'm very fluid with loads of support duties but as a lower league manager I rarely have smart enough players so am in the structured/flexible area, with CBs on defend and the mid mostly support.

There is no right or wrong, it just depends on your personal liking of how strictly responsibilities are shared throughout the squad.
And how much you want to shift your approach to an attacking or defensive one.

At one point I was using 6 lol. The number of players you give attack duty doesn't really mean much in a vacuum. Ultimately it'll be dependent on other aspects of your overall tactic.

It's more about where.

Are all channels covered by a? then you don't gain anymore from adding a duty. Similar thing for d and s.

So if you attack all 5 horizontal spaces (flanks, center, 2 halfspaces), you have plenty of penetration.

You then gain more by covering deeper spaces with support duties and some defense. (2-3 are enough)

Or maybe you go crazy and just play support roles.
