How do I get a player to play only in one club? Is it possible to do this through an ingame editor?

Yeah, do a contract with a future transfer date 20 years (or more) in the future to some random club.

Yep, good point.

I watched a Zealand test which seemed to indicate that ambition has very little effect on development, but I'm taking that with a pinch of salt.

There's an option both in the pre and in game editors called 'Retiring after spell at current club' if that's ticked a player'll stay at a club until retirement or you release him.
