My team are often the "favourites" even though I have only just been promoted into the Premier League. In my last match, we were "slight favourites", and then we lost 2-0, and the match report said that it "wasn't the best performance in the world, but to be fair to the team it would have been unrealistic for the fans to expect too much better". I would suggest one of the factors most likely to be causing the examples you're seeing is due to the odds weighting maybe a little excessively towards form on occasion. So although Accrington were favourites to win, the shock was more to do with the scale of the victory (although it could probably be worded a bit better to make that clearer).
