It would be really annoying if the game got confused and stopped working. I reckon it probably would mess it up because the activation would be messed up. I would take the risk. Best way to do it is backup your saved game files and uninstall game, then install demo, copy the files you want, uninstall demo and reinstall full game, copy saved game files to sports interactive folder and copy your copied files to the folder required.
