Pressure

Is there anyway to tell if a player is susceptible to extra pressure? I like commenting about my other team's players before a match, but I'm not often successful on picking out the right people to talk about.

There is a hidden stat for Pressure for all players. You could look it up on your players with Genie Scout.

However, you can find out without cheating the approximate character of your players through trial and error and note-taking.

What I do is after every match go through the Team Talk Feedback and if I see someone has reacted to criticism or praise I click on their name, click 'notes', and type a note. After half a season all of my players have several notes and I can look these up.

Trying to keep track of other team's players is not easy at all. You can check their profile and get a mild hint, but it'll be tough going to guess. Better to focus on your own player's reactions or admit to the gamble of commenting on their dangerman.
