This is normal for all FM games and is simply to avoid issues if you went say uber attacking in the last 10 minutes of a cup tie ... I noticed after my 5th game that the player roles had reset to default. I changed the player roles again midweek before my next match and it had reset again when I checked it before the match. After making changes in the player tactical roles screen you'll need to select the back button (which will take you back to the team instructions page) and then you will be able to confirm your changes.
