You go to player's profile and choose "Training". Above "Learning new position" you will find a dropdown menu with everything you request :)

no mate I mean u can train ur players on header or crosses or stamina

Another major improvement in training is the chance to get players to train in specific areas which include quickness, strength, stamina, jumping, finishing, freekicks, corners, taking and saving penalties, long throws, dribbling, technique, agility, balance, heading, agility, crossing, passing and kicking and handling (for goalkeepers, obviously). And don’t worry if that seems overwhelming – your staff will give you advice in the staff meetings, and suggestions of which players should be concentrating on which areas.

Individual training focus can be set for players in the team training screen, when selecting the "Individual Training Focus" view from the View menu (top right of the player list at the bottom part of the screen).

You can also go to the player profile and choose the "Training" tab and set the individual training focus from the top left "Training Report" panel.
