An older player may well have developed some of the hidden stats further than the younger player - consistency, professionalism, and pressure make huge differences. Also, elements like time in squad, favoured personnel and languages spoken can make a huge difference. These things can affect team cohesion - and a player that understands the systems and the players alongside him better, will be in a stronger position to perform well for you. The younger one tend to miss penalties because he cannot handle pressure too well even though they have the same attributes for Penalty Taking.
